OUR WINE

TERRITORY

To produce a good wine, several factors must be taken into account. One of the most important is soil. Our vineyards stretch across the hills of Castelnuovo Berardenga and Radda in Chianti, north-west of Siena, at an altitude which varies from 250 to 380 m s. l. m.
The lands owned by the farmhouse are essentially of three different types:
  • • Alberese, the land making wines tannic, structured and particularly intense
  • • Galestro, conveys wines elegance and a great ageing potential
  • • Arenaria, elegant and flavored wines are obtained from this land
Thanks to this mix and the particular microclimate we can then obtain rich and sophisticated wines.

HARVEST

Our vineyards, which are extremely well-preserved, stretch over a surface of around 36 hectares. Planting density varies from 4.000 to 5.000 vine per hectare whereas its yield is 50 quintals per hectare. The harvest is done 100% manually, normally between late September and early October when grapes reach their optimal ripening and turn into a product of excellence.

CELLAR

To obtain an increasingly better quality, most of our cellar machineries have been recently renovated by relying on the best technologies in the market. Grapes manually harvested are then destemmed and put into stainless steel tanks.

At this point, the alcoholic fermentation takes place under the controlled temperature of 28-30 degrees and at the same time, by performing continual pumping over and delestages, the passage from the skins to the liquid of the aromatic, tannic and colouring components occurrs. The maceration process varies from 12 to 20 days. The wine obtained, after a short interval inside stainless steel tanks to carry out the malolactic fermentation, is then transferred in 50 hl French oak casks,5 hl tonneaux and 2.25 hl barriques based on the typology, where it remains and ages during an interval varying from 12 to 24 months.

Once assembled and bottled, our wines undergo a further period of refinement which may last a few months so as they can rest and enhance their organoleptic properties.
